Mild
Ale is quite similar to Malteurop's Ale malt but instead comes in an orange
sack. It is not known how much the orangeness of the sack contributes special
characteristics to this malt. Mild Ale does have a tangibly different malt
character from regular Ale, with slightly more nutty, malty biscuitiness,
possibly a bit like mixing in a small concentration of Munich malt. Some of our
recipes for dark beers prefer this as the main base malt.
Grown from the Fairview, Cellar and Jimpy barley varieties in the Canterbury, Hawke’s Bay, Manawatu and Rangitikei regions, this is a fully New Zealand-sourced malt. The moderately high diastatic power lends this malt to conversion of moderate inclusions of specialty grain, allowing the production of virtually any type of beer with this as the base. Mild Ale has a typical wort colour of 7 – 8 EBC (vs. 5 – 6 for Ale), making it slightly darker in addition to the subtle character differences.
